Fried Buffalo Chicken made with buttermilk soaked boneless chicken breasts or tenders dredged in a delicious and easy to make honey buffalo sauce.
This buffalo chicken recipe uses basic pantry ingredients and is the most delicious buffalo chicken!

Honey and buffalo hot sauce mixture is drizzled over fried buttermilk chicken, giving this buffalo chicken sandwich a kick of spice and a touch of sweetness.
The secret to the crispiest chicken is with a coating mixture made of 50% corn starch & 50% flour. I mean, how delicious does this fried Buffalo Chicken look?! And if you love this one, you’ll love my Buttermilk Fried Chicken. Crispiest chicken recipes can be baked, deep fried, or air fried.
I’m seriously addicted to the combination of buffalo chicken and blue cheese. It’s such a delicious combination!

Cornstarch is used as a thickening agent for sauces, gravies, and soups. However, when used in your batter to fry chicken, it will leave you with crunch you can hear and a golden brown exterior. All while sealing in the juices of the chicken.

My grandmothers and mom have been using cornstarch in their kitchens to thicken pie fillings and gravies for years! I use cornstarch to thicken my apple filling for my Apple Hand Pies and Apple Fritters. And used as a binding agent in many of my fruit pie recipes, including Blueberry Pie, Blackberry Pie, and Homemade Cherry Pie.
How to make Buffalo Chicken:
Step 1: Let the chicken marinade in buttermilk overnight in the fridge. (or a few hours minimum)

Step 2: Mix flour, cornstarch, and spices together in a shallow baking dish.

Step 3: Shake the excess buttermilk off the chicken pieces and coat each piece on both sides with the flour and cornstarch mixture. Place each coated piece of chicken on small sheet pan lined with parchment paper.

Step 4: Preheat corn or canola oil in a cast iron skillet to 350 degrees. Use a digital thermometer to accurately monitor the temperature.
Step 5: Cook the chicken on each side for about 2-3 minutes, or until the chicken is golden brown and cooked thoroughly. The internal temperature should be at 165 degrees F. (See more on properly cooking chicken and other meats here.)
Step 6: Let the fried chicken drain on a sheet pan lined with a few layers of paper towels.

Step 7: Toss the fried chicken in the hot sauce and honey mixture. Place on toasted buns, add crumbled blue cheese and a piece of green leaf lettuce. Enjoy immediately.

Ingredients
Buttermilk Fried Chicken
- 3-4 pounds boneless skinless chicken filets thinly sliced
- 2 cups buttermilk
- 1 cup all-purpose flour
- 1 cup cornstarch
- 1 teaspoon onion powder
- ½ teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon ground black pepper
Buffalo Sauce
- ⅔ cup hot sauce or buffalo sauce
- ¼ cup (½ stick) butter
- ¼ cup honey
- Canola or corn oil for frying
