    Spritz cookies on baking tray

Spritz Cookies are a holiday tradition for our Christmas cookie trays. Using a cookie press, this buttery cookie dough does not need to be chilled. These Classic Spritz Cookies are festive and nostalgic. My mom made these Swedish Butter Cookies every Christmas!

Making holiday cookies is a tradition in our household. I try not to make too many varieties, otherwise I’ll get overwhelmed and stress.  I love making Christmas cookies to put into cookie trays and give away to neighbors, postal workers, UPS driver, teachers, and such. Be sure and try my Best Chocolate Chip Cookies, Christmas Decorated Sugar Cookies, and Old Fashioned Molasses Cookies. I also love making Peanut Butter Blossoms. Those are one of our favorites!

You’ll need a cookie press to make Spritz Cookies. You can buy one on Amazon or locate a vintage cookie press on Ebay. (Mine is a “Wear-ever Cookie gun”)

How to make Classic Spritz Cookies:

Step 1: Preheat the oven to 400 degrees F.

Step 2: In a large mixing bowl of a stand mixer or using an electric hand mixer cream together the butter, sugar, vanilla, and almond extract.

Step 3: Add the egg, flour, baking powder, and milk. Combine until everything is combined well. Use a rubber spatula to scrape the sides and bottom of the mixing bowl to thoroughly combine the ingredients. Do not chill the dough.

Step 4: Use a few drops of food coloring to color small amounts of the cookie dough. Use disposable plastic food grade gloves to easily handle the dyed cookie dough and to combine the food coloring into the cookie dough. Leave most of the dough uncolored.

Step 5: Place the desired disk on the end of the cookie press. Fill the cookie press with dough. I usually alternate the colors with the natural cookie dough. Twist on the top of the cookie press. Squeeze the cookie press until the cookie dough starts to come out.

Step 6: Hold the cookie press straight up and down, directly on the sheet pan. Squeeze the cookie press one full and one half pump. Then hold the cookie tray as you pick up the cookie press. The cookie should release and stay on the sheet pan. Squeeze cookies evenly on the sheet pan, so they have a little room to spread.

(Note: Sometimes this just takes learning the correct technique of how to make the Spritz cookies stick to the sheet pan. Half sheet pans are generally cooler or cold. This tends to help the cookie dough stick too.)

Step 7: Bake in a preheated oven for 9-10 minutes. Rotate the cookie trays half way through the baking process.

Should you use parchment paper on the cookies trays for Spritz Cookies?

No, do not use parchment paper. You want clean, dry, and grease free half sheet pans. The cookies need something to stick to. You should also use a metal spatula to carefully remove from the sheet pans while still warm. Otherwise they will stick to the sheet pans and be difficult to remove.

I love the Old Fashioned Spritz Cookies recipe from Wilton. You can dip these cookies into chocolate after they are baked and they are freezer-friendly. I place them on decorative plastic holiday plates along with a few other holiday cookies, wrap with plastic wrap and give out to our neighbors. Everyone loves something homemade with love during the holidays!
