    Parmesan Chicken Tenders

    Parmesan Chicken bites with small bowl with marinara sauce

    These tender Parmesan Crusted Chicken Bites in are coated in bread crumbs, cornflakes crumbs and freshly grated Parmesan cheese. They are a perfect snack for tailgates and family gatherings dipped in marinara, ranch dressing, or barbecue sauce.

    We love chicken bites and what better way to have them than homemade in our own kitchen. We can control the ingredients and even how they are prepared! These make a great appetizer or snack for a family gathering or a movie night. If you don’t want to fry them in oil, you can certainly bake them in the oven. This delicious appetizer or snack is quick to prepare and has a great flavor!

    How to make Parmesan Chicken Bites:

    Step 1: In a shallow dish, mix the seasoned bread crumbs, cornflakes crumbs, Parmesan cheese, onion powder, garlic powder, salt, and black pepper. Add flour to another shallow dish and egg to another.

    Step 2: Dredge the chicken pieces into flour, shake the excess off. Dip into egg, then into bread crumb mixture. Press the chicken into the bread crumb mixture so it sticks well.

    Step 3: Heat oil over medium heat in a large skillet. Working in batches, cook the chicken. Turning it with tongs to cook all sides. Cook until evenly golden brown, about 3-4 minutes. Place on a plate lined with paper towels to drain.

    Step 4: Serve immediately with freshly grated Parmesan cheese and parsley. Serve with marinara, cheese sauce, barbecue sauce, or honey mustard.

    Equipment

    • Lodge Cast Iron Skillet (12-inch)

    Ingredients

    • ½ cup vegetable or canola oil
    • 2-3 boneless skinless chicken breasts cut into 1-inch cubes
    • ½ cup seasoned bread crumbs
    • ½ cup cornflakes crumbs
    • ⅓ cup freshly grated Parmesan cheese
    • 1 teaspoon onion powder
    • ½ teaspoon garlic powder
    • salt and black pepper to taste
    • ½ teaspoon paprika
    • ½ cup all-purpose flour
    • 2 large eggs beaten
    • 2 tablespoons fresh parsley finely chopped
