    Carolina Farmhouse Kitchen

    Warm up with a big bowl of my Farmhouse chili. Whether you are in New England and shoveling out of from the heaps of snow Mother nature has dumped on you, or in the South where the cold winds have been intense- this is a hearty meal you are sure to enjoy! Be sure and top this yummy Farmhouse Chili with shredded cheddar cheese and sour cream. If you have a great bakery nearby, you can order Italian bread bowls.. now that is a meal! This recipe does make a rather large pot, so put a little in plastic quart deli containers and pop in the freezer for when you don’t have a lot of time to fix a homemade meal.

    Ingredients

    • 3 pounds (80% lean) ground chuck
    • ½ pound bacon finely chopped
    • 1 large onion finely chopped
    • 1 large green pepper finely chopped
    • 2 (15-ounce) cans tomato sauce
    • 2 (10-ounce) cans Ro*Tel original
    • 1 (15-ounce) can red kidney beans (drained)
    • 1 (15-ounce) can black beans (drained)
    • 2 packets McCormick chili seasoning
    • 1 teaspoon ground paprika
    • 1 teaspoon chilli powder
    • 1 teaspoon onion powder
    • 1 teaspoon garlic powder
    • salt & pepper to taste

    Instructions

    • In a large pot, over medium heat cook the bacon until almost crisp. Add the beef and brown. Add the brown beef and the bacon pieces to a slow cooker. Add the remaining ingredients and spices. Put the cover on the slow cooker. Cook on low temperature setting for about 8 hours. Or you can cook on high temperature setting for an hour or so and put it to low temperature for a few more hours (just to let flavors simmer together)

      There is nothing better than a fresh crock of this chili on a cold winter day coupled with a nice piece of crunchy French bread it’s unbeatable!
