The weekend is upon us and I’m thinking of warm Apple Oat Muffins drizzled with gooey maple icing. Can you say- Yum! This yummy combination of tart apples and maple syrup swirled into a moist muffin will leave your mouth wanting another. This recipe makes about 15 average size muffins- but if you are making over-sized muffins, you’ll probably get about 12. These will stay fresh for several days- so go ahead and bake a few extra for Sunday morning. Now is the perfect time of year to visit a local apple orchard and pick your own. Or visit a local orchard and get apples that they freshly picked for you- sometimes the later is easier with our busy lives.
Let’s talk about food photography for a second. If you could only see the set up I have in our backyard- saw horses with reclaimed wood panels from the hog pen on my parents farm, new wood I distressed with white acrylic paint and Elmer’s glue (then left outside for a few months to distress it even more!) and a custom Farmhouse style table that is very rustic looking. The Farmhouse table is made from reclaimed shipping pallets and has matching benches. I love to use natural light, so I prefer to photograph outside. If you could only see me, practically standing on my head sometimes just to get the right shot. I also have a utility step stool that is readily available to get me up high and at just the right angle to capture a great shot. I want you to be able to taste the brown sugar crystals off each image.
Apple Oat Muffins
Ingredients
Apple Muffins
- ½ cup vegetable shortening or softened butter
- 1 cup brown sugar
- 1 cup full-fat sour cream
- 2 cups all-purpose flour
- 1 cup rolled oats
- 1 ½ cups diced tart apples
- 3 large eggs
- 1 teaspoon pure vanilla extract
- 1 teaspoon kosher salt
- 1 tablespoon baking powder
- 1 ½ teaspoons ground cinnamon
- ½ teaspoon ground nutmeg
Streusel Topping
- ⅔ cup packed brown sugar
- ½ cup all-purpose flour
- ½ stick butter softened
- ¼ teaspoon ground cinnamon
Maple Icing
- 2 cups powdered sugar
- 1-2 tablespoons milk
- 2 tablespoons pure maple syrup Dark
Instructions
Apple Muffins
- In a large bowl, cream together the shortening, brown sugar and vanilla. Add the eggs one at a time and combine. Add the flour, salt, baking powder, rolled oats, cinnamon, nutmeg and combine. Add the chopped apples and fold in.
- In a mixing bowl, combine the butter, brown sugar, flour and ground cinnamon with your fingers to create the streusel topping.
- Scoop the batter into paper-lined muffin tins. Sprinkle with streusel topping.
- Bake in a preheated 350 degree F oven for about 25 minutes or until a toothpick comes out clean.
Maple Icing
- In a small bowl, whisk together the icing ingredients until smooth. Cover with plastic wrap and set aside.
- Let the muffins cool slightly and drizzle with maple icing.
