Meatloaf Recipe

Homemade meatloaf uses simple ingredients and topped with a sweet and tangy

Ingredients

Meatloaf

  • 2 pounds ground beef (80-85% lean)
  • ¾ cup seasoned bread crumbs
  • 1 cup whole milk
  • 2 large eggs
  • 1 medium yellow or white onion, finely chopped
  • 2-3 tablespoons garlic, minced
  • 2 tablespoons fresh parsley, finely chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Meatloaf Glaze

  • 3 tablespoons brown sugar
  • ¾ cup ketchup
  • 2 tablespoons prepared mustard (stoneground, yellow or Dijon mustard)
  • ¼ teaspoon ground nutmeg

Instructions

Meatloaf

  • Preheat the oven to 375 degrees F. Line a rimmed baking sheet or baking pan with aluminum foil, set aside.
  • In a large bowl add the milk, bread crumbs and eggs. Let sit for 5 minutes.
  • Add the ground beef, onions, garlic, parsley, salt, and pepper. Use your hands to mix the ingredients together. Mix just until combined, do not overmix.
  • Use your hands to shape the meatloaf mixture into a loaf on the prepared baking sheet.
  • In a small bowl, combine the glaze ingredients; ketchup, brown sugar, mustard and nutmeg. Use a spoon or small spatula to combine. Spread the glaze mixture over the top and sides of the meatloaf.
  • Bake in the preheated oven, uncovered for 50-55 minutes. Or until an internal temperature reaches 160 degrees F.
  • Let it rest for 10 minutes prior to slicing.
  • Refrigerate any leftovers for up to 5 days.

Notes

Can substitute dried parsley if needed.
We prefer to use minced garlic from the bottle. Find it in the produce section, near tomatoes and garlic. It needs to be refrigerated after opening.
While we prefer baking the meatloaf on a sheet pan or baking pan, you can also use a metal loaf pan.
