2-3boneless skinless chicken breastscut into 1-inch cubes

½cupcornflakes crumbs

½teaspoongarlic powder
salt and black pepper to taste

½cupall-purpose flour
2large eggsbeaten
2tablespoonsfresh parsleyfinely chopped
Instructions
In a shallow dish, mix the seasoned bread crumbs, cornflakes crumbs, Parmesan cheese, onion powder, garlic powder, salt, and black pepper. Add flour to another shallow dish and egg to another.
Dredge the chicken pieces into flour, shake the excess off. Dip into egg, then into bread crumb mixture. Press the chicken into the bread crumb mixture so it sticks well.
Heat oil over medium heat in a large skillet. Working in batches, cook the chicken. Turning it with tongs to cook all sides. Cook until evenly golden brown, about 3-4 minutes. Place on a plate lined with paper towels to drain.
Serve immediately with freshly grated Parmesan cheese and parsley. Serve with marinara, cheese sauce, or honey mustard.
