Ingredients

  • ½ cup vegetable or canola oil
  • 2-3 boneless skinless chicken breasts cut into 1-inch cubes
  • ½ cup seasoned bread crumbs
  • ½ cup cornflakes crumbs
  • cup freshly grated Parmesan cheese
  • 1 teaspoon onion powder
  • ½ teaspoon garlic powder
  • salt and black pepper to taste
  • ½ teaspoon paprika
  • ½ cup all-purpose flour
  • 2 large eggs beaten
  • 2 tablespoons fresh parsley finely chopped

Instructions

  • In a shallow dish, mix the seasoned bread crumbs, cornflakes crumbs, Parmesan cheese, onion powder, garlic powder, salt, and black pepper. Add flour to another shallow dish and egg to another.
  • Dredge the chicken pieces into flour, shake the excess off. Dip into egg, then into bread crumb mixture. Press the chicken into the bread crumb mixture so it sticks well.
  • Heat oil over medium heat in a large skillet. Working in batches, cook the chicken. Turning it with tongs to cook all sides. Cook until evenly golden brown, about 3-4 minutes. Place on a plate lined with paper towels to drain.
  • Serve immediately with freshly grated Parmesan cheese and parsley. Serve with marinara, cheese sauce, or honey mustard.
