Berry Popsicles

Berry Popsicle are wonderfully simple to create and a perfect treat on a hot summer day!

Ingredients

  • 2 cups blueberries
  • 3 cups strawberries
  • ¼ cup fresh lemon juice
  • ½ cup hot water
  • ½ cup sugar

Instructions

  • In a blender, add the strawberries and blueberries. Add the lemon juice, sugar and hot water and blend together well. Using a large Pyrex measuring cup pour the mixture into Popsicle molds. Place the cover on and add wooden Popsicle sticks. Place in the freezer for about 6 hours or overnight.
  • To remove from the Popsicle mold, simply run warm water on the outside of the mold. They should pop out easily then. Put Popsicle into individual plastic baggies and into a large freezer bag. Pop into the freezer until you are ready to enjoy.
