Strawberry Cocktail

Summery cocktail made with strawberries, raspberries, lime juice, white rum, lemon-lime soda and garnished with fresh mint. These Strawberry Cocktails are refreshing on a summer's day.

Ingredients

Strawberry Cocktails

  • 1 pint fresh raspberries
  • 1 pint fresh strawberries, sliced
  • ½ cup water
  • ½ cup granulated sugar
  • 1 cup white rum
  • ¼ cup lime juice
  • 1-2 cups ice cubes
  • 1 (16-ounce) can lemon-lime soda
  • fresh mint for garnish
  • fresh raspberries for garnish

Instructions

  • In a small saucepan over low to medium heat, combine the raspberries, strawberries, water, and sugar. Bring to a boil and stir until the sugar dissolves and berries soften.
  • Press the mixture through a wire mesh strainer. Let the juice cool. Discard the pulp and seeds.
  • In a pouring pitcher, combine the berry juices with rum and lime juice.
  • Divide the ice cubes evenly among 4 to 6 glass tumblers or cocktail glasses. Pour the mixture evenly over the ice in each glass. Top with lemon-lime soda, and garnish with fresh mint and raspberries.
