Ingredients

Grilled Wild Salmon

  • 1 ½ pounds Wild Salmon (skin removed)
  • 1 teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon smoked paprika
  • 1 tablespoon granulated maple sugar
  • 1 teaspoon ground mustard
  • 1 tablespoon bacon bits
  • salt and black pepper to taste
  • 1 wooden plank maple, oak, or cedar

Instructions

  • Soak a wooden plank in water for a minimum of 2 hours.
  • Preheat your charcoal grill to medium high heat.
  • Mix together the spices and bacon bits in a small bowl.
  • Place the salmon on the wooden plank. Rub the salmon with a few teaspoons of spice rub.
  • Place the wooden plank with the salmon on the grill on the hot grate, away from the hot coals. Cook for 20-30 minutes, or until the internal temperature of the salmon reaches 135 degrees F and the salmon flakes apart with a fork.
  • Serve the salmon right on the cedar plank, along with seasonal vegetables, rice pilaf or mashed potatoes.

Notes

Soaking a wooden plank in water helps prevent it from catching fire on the grill.
