Blueberry Peach Coffee cakes in loaf pans cooling on a baking rackI really wish you could smell and taste this delicious coffee cake right now! Oh, it smells amazing! One of my mom’s best desserts was this moist and tasty coffee cake recipe.

Peaches and blueberries are in season right now, so I decided to use them! Cut up the peaches into small pieces and place in a bowl with blueberries. If you prefer, cut up two apples (Macoun, Granny Smith, or Macintosh) into small pieces and toss with a little cinnamon (maybe 1 teaspoon) and add to your cake batter. Be sure and try Orange Dreamsicle Cake, Chocolate Layered Cake, Red Velvet Cake, and Strawberry Shortcake.

You’ll need a few loaf pans. Order here if you need.

These paper loaf pan liners are amazing! No need for spraying cooking spray on your pans. Just plop these babies into your loaf pans and you’ll easily remove the coffee cakes, banana bread, and any yeast bread you bake.

How to make Streusel Topping:

Simply add the ingredients to a bowl and press together with your fingers to combine. Add the desired amount of cinnamon to your liking.

How to make Sour Cream Coffee Cake:

Step 1: Cream together the sugar and butter. Be sure and scrape the bottom and sides of the bowl occasionally with a rubber spatula.

Step 2: Add the vanilla, eggs, and sour cream.

Step 3: Add half of the flour and combine. Add the remaining flour and baking powder and mix until combined.

Step 5: Divide the batter evenly between three lined loaf pans.

Step 6: Spread the streusel topping evenly over the coffee cake batter.

Step 7: Place the loaf pans onto a half sheet pan lined with parchment paper. Place the cakes into a preheated 350 degree F oven and bake for 60 minutes. Test the cakes. They are done when a toothpick inserted into the center of the cakes comes out clean. Let cool for 20 minutes before removing from loaf pans.

I use a lot of spatulas in my kitchen on a weekly basis! They are great for scraping sour cream or buttermilk out of the Pyrex or Anchor glass measuring cups. And the mini spatulas are great for getting jam out of the jar for my Raspberry Oatmeal Bars! ThermaWorks makes some the most incredible thermometers and spatulas. I love that I can put the spatulas right in the dishwasher to clean.

Sour Cream Coffee Cake

Ingredients

  • 2 cups granulated sugar
  • 1/2 cup (1 stick) unsalted butter softened
  • 4 large eggs, room temperature
  • 1 1/4 cups full-fat sour cream
  • 4 cups all-purpose or cake flour sifted
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon pure vanilla extract
  • 1 cup fresh blueberries
  • 2 peaches, peeled, pitted, diced

Streusel toppping

  • 1/2 cup (1 stick) unsalted butter softened
  • 1 cup granulated sugar
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon ground cinnamon

Instructions

Streusel Topping

  • In a bowl, combine the ingredients with your fingers. Adjust the cinnamon to your liking.

Coffee Cake

  • Preheat the oven to 350 degrees F. Line three loaf pans with baking papers. Set aside.
  • In a large mixing bowl of a stand mixer or use an electric hand mixer, cream together the butter and sugar.
  • Add the salt, eggs, vanilla, and sour cream and combine. Occasionally scrape the sides and bottom of the bowl with a rubber spatula.
  • Add the half of the flour and combine. Scrape the bowl again with a rubber spatula. Add the remaining flour and baking powder and mix until combined.
  • Fold in the blueberries and peach pieces.
  • Divide the batter evenly between the three loaf pans. Sprinkle the streusel topping evenly on the top of each unbaked coffee cake. (keep any leftover streusel topping in a freezer safe Ziploc bag)
  • Place the loaf pans on a half sheet pan lined with parchment paper. Bake in a preheated 350 degree F oven for 60-65 minutes. Cakes are done when a toothpick inserted into the center of the cakes comes out clean.
  • Let the cakes cool for 20 minutes before slicing.

Notes

NOTE:
You do not need to add fruit if you do not wish.
Add a bit more cinnamon to the recipe to make a darker streusel topping.

Are you looking for a great homemade bread recipe? Oatmeal Bread is easy to make with simple ingredients and is the perfect sandwich bread.

Making bread from scratch isn’t hard, you just need time to let the bread rise. This bread recipe makes three loaves. The bread freezes well too! Make a loaf for yourself, freeze one, and share with a neighbor. Homemade bread is perfect for French toast, sandwiches, and egg in a hole. It also pairs well with a bowl of my Beef Chili, Potato Soup, Italian Sausage Soup, Boeuf Bourguignon, and Beef Stew.

This basic bread recipe calls for old-fashioned or rolled oats. I also use rolled oats in my Apple Crisp Recipe, Raspberry Oatmeal Bars and Easy Blueberry Muffins. For my Oatmeal Cream pies, I use instant oats. Also try Taste of Home’s basic bread recipe.

How to make Oatmeal Bread:

In a large bowl, combine 1 cup of the oats, shortening, and salt. In a saucepan, bring the milk to a gentle boil. Pour hot milk over the oat mixture. Stir, cover, and cool to lukewarm.

Dissolve the yeast in the water. In a bowl of a stand mixer, or in a large bowl using an electric hand mixer, mix the maple syrup, eggs, and dissolved yeast with the oatmeal mixture.

Using a dough hook, stir in 4 cups of the flour and wheat germ until combined. Add more flour as needed. (Also find wheat germ in the grocery store in the baking aisle)

Use a rubber bench scraper or spatula to turn the dough out onto a well-floured work surface. Knead the bread for 6 to 8 minutes. Place the dough into a greased bowl and cover with plastic wrap. Let rise in a warm place until doubled in size. (about 1 to 1 1/2 hours)

Punch down the dough and shape into 3 loaves. Transfer to the prepared pans. Make a sharp cut down the center of each loaf. Brush each loaf with the beaten egg and sprinkle with the remaining 1/4 cup rolled oats and brown sugar. Cover loosely with plastic wrap and let rise until doubled. (about 30 minutes to 1 hour)

Bake, cool and enjoy. Enjoy with whipped maple butter. (Add 2 sticks of softened butter to a bowl along with 1/4 cup of pure maple syrup. Beat with a whisk attachment until light and fluffy. Place in a container and refrigerate.)

I love making homemade bread! These cast iron loaf pans are great. But you can use whatever you have in your kitchen! My mom always used a basic loaf pan. The same one I use for my Sour Cream Coffee Cake and Banana Bread.

Ingredients

Oatmeal Bread

  • 1 1/4 cups old-fashioned rolled oats divided

  • 1 packet (.25-ounce) active dry yeast (or 2 1/4 teaspoons)
  • 1/2 cup water, lukewarm

  • 2 large eggs room temperature
  • 5-6 cups bread or all-purpose flour
  • 1 cup wheat germ

Egg Wash

  • 1 large egg for egg wash
  • 1 teaspoon water
  • 1 tablespoon brown sugar

Instructions

Oatmeal Bread

  • Preheat the oven to 375 degrees F. Bake loaves for 30-35 minutes, until golden brown. Let cool for 10 minutes. Remove from bread pans and let cool completely on a baking rack.

Notes

Oatmeal Bread:
For homemade bread, I'd rather the dough be a little sticky and turn it out on to a floured surface to knead.  (adjust the flour as needed)
Gently spray the underside of the plastic wrap with cooking spray. This will prevent it from sticking to the bread as it rises!
Substitute honey instead of maple syrup if you don't have it!
If you over proof your bread it will fall while it bakes in the oven.

Almond Crusted Tilapia is a simple and delicious meal to make in a cast iron skillet. Tilapia fillets coated in flour, egg wash, and almond breading.

We are eating healthier and trying to incorporate more fish into our diets. Instead of pan frying, you could cook this tilapia in the oven for an oven baked tilapia. This crusted tilapia is golden on the outside, tender and flaky on the inside.

How to make Almond Crusted Tilapia:

Step 1: Place the almonds in a food processor and pulse until finely ground. Mix together with bread crumbs, lemon pepper, ground mustard, onion, garlic powder, salt, and pepper. Place the breading mixture into a shallow bowl or pie dish.

Step 2: Whisk together the eggs and place them in a shallow bowl or pie dish. Place the flour in another shallow bowl or pie dish.

Step 3: Dip the tilapia fillets into flour and shake off the excess. Then dip into the egg wash and coat both sides. Then coat both sides of the fish with almond breading.

Step 4: Preheat a medium skillet over medium heat. Add the canola oil and butter. Place the fish in the skillet and cook on each side for about 2-3 minutes, or until golden brown. Flip and cook the other side. Fish will flake apart when done.

HOW TO ROAST GARLIC:

Step 1: Slice the top off of the head of garlic. Place on a double layer of aluminum foil. Drizzle with extra virgin olive oil and sprinkle with salt and pepper to taste. Gently bring the aluminum foil together like a tent and place in the oven for about 20 to 25 minutes. Let cool.

Step 2: Squeeze the garlic into a bowl and whisk together with maple syrup and softened butter. Place in a small bowl and refrigerate until needed.

HOW TO MAKE SOUR CREAM MASHED POTATOES:

Step 1: Peel the potatoes and cut into 1/2-inch cubes. Place in a pot of cold water and sprinkle with salt. Bring to a boil and cook until tender, about 12 minutes. Drain.

Step 2: Smash the potatoes with a potato masher or electric hand mixer. Add the butter, sour cream, salt and pepper to taste. Sprinkle with shredded cheddar cheese and chopped chives. Cover and set aside.

HOW TO MAKE MAPLE ROASTED GARLIC BUTTER:

Step 1: Add the softened butter and maple syrup to a small bowl. Use a whisk or an electric hand mixer to combine. Add the cooled roasted garlic and fold in with a rubber spatula. Cover with plastic wrap and refrigerate until needed.

Yum- paired perfectly with heirloom tomatoes, still warm from the summer sun, sprinkled with salt and black pepper. I walked out into our vegetable garden and harvested some green beans to go along with these Grilled Pork Chops. Delicious, home cooked dinner in about 35 minutes. I topped these wonderfully moist pork chops with a maple and roasted garlic whipped butter. This adds even more depth to an already easy grilled pork chop recipe.

If you love your pork medium rare, you should cook it to an internal temperature of 145 degrees (followed by a three-minute rest). Click HERE for more tips on cooking pork!

  • Preheat the oven to 400 degrees F.
  • Slice the top off of the head of garlic. Place on a double layer of aluminum foil. Drizzle with extra virgin olive oil and sprinkle with salt and pepper to taste. Gently bring the aluminum foil together like a tent and place in the oven for about 20 to 25 minutes. Let cool. Squeeze the garlic into a bowl and whisk together with maple syrup and softened butter. Place in a small bowl and refrigerate until needed.

Sour Cream Mashed Potatoes

  • Peel the potatoes and cut into 1/2-inch cubes. Place in a pot of cold water and sprinkle with salt. Bring to a boil and cook until tender, about 12 minutes. Drain. Smash the potatoes with a potato masher or electric hand mixer. Add the butter, sour cream, salt and pepper to taste. Sprinkle with shredded cheddar cheese and chopped chives. Cover and set aside.

Maple Balsamic Glaze

  • In a small saucepan, over medium heat, cook the garlic in the olive oil. Add the balsamic vinegar and maple syrup and let simmer for about 5 to 6 minutes. This will thicken it slightly. Pour into a liquid measuring cup.

Grilling Pork Chops

  • Sprinkle the pork chops generously with salt and pepper. Grill on a preheated grill for about 3 to 4 minutes on each side. If you love your pork medium rare, you should cook it to an internal temperature of 145 degrees (followed by a three-minute rest).
  • Coat each pork chop generously with the maple balsamic glaze and place on the grill with no direct heat. This will caramelize the glaze without further cooking the pork chops. Let the meat rest for 5 minutes before cutting. Serve with your choice of seasonal vegetables.

They are easy to make and can be made ahead of the day before and the dough left to rise overnight in the refrigerator. This is one of my most popular and most requested recipes! I mean, who doesn’t love homemade cinnamon rolls?! They do take some time, as the dough needs to properly rise. But, oh how they are SO worth the effort! And you can make the dough ahead of time, then simply bake the cinnamon rolls in the morning.

How to make Homemade Cinnamon Rolls:

Step 1: In a large mixing bowl of a stand mixer dissolve the yeast in the warm water. Add the warm milk, sugar, honey and eggs. Add the dough hook attachment, and stir in the flour and salt. Scrape the bottom and sides of the bowl occasionally with a rubber spatula. Cut the butter into small pieces and incorporate into the dough. Scrape the bowl a few times. Beat the dough until it becomes smooth, about 5-7 minutes.

Step 2: Turn the dough out onto a floured work surface and knead for 5-6 minutes, making a smooth dough. This dough is going to be sticky when you turn it out. After kneading, shape into a round ball and place back into the greased mixing bowl. Cover loosely with plastic wrap and drape with a clean kitchen towel.

Step 3: Place in a warm area and let rise until doubled in size, about 1 hour. Turn the dough out onto a floured work surface and knead the dough for a few minutes. Turn back into the greased bowl (spray with cooking spray again if needed) and let rise again until doubled, about 1 hour.

cinnamon rolls rising in a mixing bowlStep 4: Turn the dough out onto a lightly floured work surface and roll out with a rolling pin. Making it into a rectangle shape, about 1/2-3/4-inch thick. Spread the melted butter evenly with a pastry brush. Sprinkle the brown sugar and granulated sugar evenly over the melted butter. Sprinkle generously with ground cinnamon.

How to Make Cinnamon Rolls Icing:

Combine powdered sugar, vanilla, and milk with a whisk. Adjust as you desire. I tend to like a thicker icing so it spreads and doesn’t melt too quickly down the cinnamon rolls.

Step 5: Place the cinnamon rolls evenly into greased cast iron pans or a half sheet pan lined with parchment paper. Cover the pan loosely with plastic wrap and a clean kitchen cloth and let rise until doubled, about 1 to 1 1/2 hours.

Step 6: Preheat the oven to 350 degrees F. Once the cinnamon rolls have doubled in size, brush gently with an egg wash. Place the cast iron pan in the preheated oven and bake for 25-30 minutes. Let cool on a baking rack for 15 minutes before spooning the icing over top the cinnamon rolls.

Cast Iron Cinnamon Rolls

Ingredients

Dough:

  • 2 1/4 teaspoons 1 packet active dry yeast
  • 1/4 cup lukewarm water
  • 1 1/2 cups milk warm

  • 3 large eggs, room temperature
  • 5 1/2 cups all-purpose flour
  • 1 teaspoon kosher salt
  • 1/2 cup (1 stick) unsalted butter softened

Cinnamon roll filling

  • 1/2 cup (1 stick) butter melted
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • ground cinnamon

Icing:

  • 3 cups powdered sugar
  • 1 teaspoon pure vanilla extract
  • 2-4 tablespoons whole milk

Instructions

  • Roll up, starting at the long end fairly tight. Brush the edge of the dough with melted butter and press to seal. Cut the dough into 2 inch rolls.
  • Place the cinnamon rolls evenly into greased cast iron pans or a half sheet pan lined with parchment paper. Cover the pan loosely with plastic wrap and a clean kitchen cloth and let rise until doubled, about 30 minutes to 1 hour.
  • While they are rising, whisk together your icing. Cover with plastic wrap and set aside. You want it to be fairly thick.
  • Preheat the oven to 350 degrees F. Once the cinnamon rolls have doubled in size, brush gently with an egg wash. Place the cast iron pan in the preheated oven and bake for 25-30 minutes. Let cool on a baking rack for 15 minutes before spooning the icing over top the cinnamon rolls.
  • To make the icing; mix the powdered sugar, vanilla extract, and milk in a bowl with a whisk. Adjust the milk amount as needed based on how thick or thin you prefer your icing.

Notes

This is a sticky dough. Use plenty of flour on your work surface as needed so the dough doesn't stick to your work area.

Make ahead Cinnamon Rolls:

Make the dough the day before. After the second rise, place the entire bowl in the fridge. Cover the top of the bowl loosely with plastic wrap. Spray the plastic wrap with cooking spray so the dough doesn't stick to it! In the morning, simply roll out the dough and shape into cinnamon rolls. Let rise or warm up for about 30 minutes to 1 hour.
Bake as directed

These spinach stuffed chicken breasts are easy to make and so good with a mushroom cream sauce. This easy stuffed chicken breast recipe will be a new favorite! Also try my Stuffed Lobster Tails.

Butterfly the chicken breasts. Lay them flat on a cutting board or butcher block. Place one hand on top of the chicken breast to hold it in place and slice three quarters of the way. Be careful not to slice all the way through the chicken. To easily flatten the chicken breasts I used a meat pounder. It’s an inexpensive kitchen tool that will help you easily flatten and tenderize chicken breasts and other types of meat.

How to make Easy Stuffed Chicken Breasts:

To easily flatten your chicken breasts, place the filleted chicken breasts in between butcher’s paper and smash and slide outward. More than anything, you really want to lightly pound with mostly a sliding motion. Flattening the chicken evenly.

Sprinkle each chicken breast with salt and black pepper to taste. Place a handful of spinach and some shredded mozzarella cheese in the center of each chicken breast.

Carefully roll up the chicken and tie with butchers twine. To keep from spreading raw chicken throughout my kitchen, I use kitchen shears to pre-cut the butchers twine and work in batches. Use kitchen shears to trim the butchers twine. (I usually tie the twine in the center first, then tie both sides) Wash your hands well with hot water and soap.

Place the stuffed chicken breasts on a half sheet pan lined with parchment paper. Use tongs to brown in a large cast iron skillet over medium to high heat. Brown a few pieces at a time, careful not to overcrowd the pan. Turn occasionally to brown all sides.

Place the browned chicken breasts into the prepared baking dish, set aside.

Add remaining 1/2 stick butter to the pan and add the sliced mushrooms. Stir occasionally with a wooden spoon. Once they are browned, spoon them over the stuffed chicken breasts.

Deglaze the pan with the white wine. Add the heavy cream slowly and use a whisk to incorporate. Dissolve the cornstarch in a measuring cup with cold water. Add the cornstarch mixture to the wine and heavy cream mixture. Add a heaping spoonful of apricot preserves and whisk to combine. Cook until thickened slightly. Season with black pepper. Pour the cream mixture over top the stuffed chicken and mushrooms.

Bake in the oven for 25 minutes or until the chicken is fully cooked. Serve immediately with fresh green beans or another seasonal vegetable.

Instructions

  • Add remaining 1/2 stick butter to the pan and add the sliced mushrooms. Stir occasionally with a wooden spoon. Once they are browned, spoon them over the stuffed chicken breasts.
  • Deglaze the pan with the white wine. Add the heavy cream slowly and use a whisk to incorporate. Dissolve the cornstarch in a measuring cup with cold water. These delicious homemade Chocolate Chip Cookies are the perfect combination of crunchy outside edges and chewy inside. With the addition of Heath Bar pieces, these will be your new favorite chocolate chip cookie recipe!

What makes a great chocolate chip cookie?

You may be thinking that chocolate chip cookies may sound like a simple recipe, and you’d be right. But, it’s all about having the just the right combination of ingredients. For the last year I’ve been tweaking and perfecting my chocolate chip cookies. Personally, I want a cookie to spread nicely, but still maintain it’s shape. And, I want the cookie to be a little crunchy on the outside edges, but chewy and soft in the center. This is that cookie! I’ve added a little bit of extra flavor with Heath bar pieces. Grab a few bags in the baking aisle, right near the chocolate chips.

How do I get the rippled edges on chocolate chip cookies?

Okay- let’s talk a bit about the baking method. Have you seen the pan banging cookies that Sarah from The Vanilla Bean Blog? By using a similar method of banging the pan during the baking process, these chocolate chip cookies become crunchy on the outer edges and chewy on the inside. Chocolatey goodness!

How to make Chocolate Chip Cookies:

Most important thing to remember when making cookies is to mix everything well. I start with room temperature butter and beat that by itself. Then add the sugars and cream. Be sure and scrape your bowl several times with a rubber spatula. (This is my favorite rubber spatula! And it’s dishwasher safe!)

I use this jumbo ice cream scoop to evenly scoop the chocolate chip cookie batter onto my half sheet pans. Each half sheet pan is lined with parchment paper that is pre-cut and comes in a box flat. This makes it so easy to clean up trays afterwards and I don’t have to struggle with a roll of parchment paper!

With this size ice cream scoop, about 6 chocolate chip cookies fit on a half sheet pan. Space them evenly, so as they bake they do not touch.

In a large mixing bowl, cream together the sugars and butter. Add the vanilla and one egg at a time and combine. Add the flour, salt, baking powder and baking soda. Combine thoroughly. Scrape the sides and bottom of the bowl occasionally with a rubber spatula. Add the chocolate chips and Heath bar pieces. Mix only until it’s combined.

Scoop out cookie dough using an ice cream scoop and place them on a parchment lined sheet pan. Leave enough space as they will spread a bit. Six cookies fit on a half sheet pan.

  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 2 1/2 cups all-purpose flour
  • 2 large eggs room temperature
  • 1 teaspoon kosher salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 teaspoons pure vanilla extract
  • 1 1/2 cups semisweet chocolate chips
  • 1/2 cup Heath Bar pieces

Instructions

  • In a large mixing bowl, cream together the sugars and butter. Add the vanilla and one egg at a time and combine. Add the flour, salt, baking powder and baking soda. Combine thoroughly. Scrape the sides and bottom of the bowl occasionally with a rubber spatula. Add the chocolate chips and Heath bar pieces. Mix only until it's combined.
  • Scoop out cookie dough using an ice cream scoop and place them on a parchment lined sheet pan. Leave enough space as they will spread a bit. (I get 6 cookies on a half sheet pan)
  • Bake in a preheated 375 degree F oven for about 18-20 minutes or until golden brown. Once the cookies are spread out a bit, as they cook, bang the pan a few times. (This will make them spread out and become crunchy on the edges, yet chewy on the inside) They may look a little under-cooked, but they continue cooking after you remove them from the oven and will set perfectly. Rotate your pans in the oven once, during the baking process. Let the cookies cool for 5-10 minutes before removing them from the baking sheet.

Notes

If you make smaller cookies they will take less time to cook. These are jumbo sized cookies.

Decorated Heart Sugar Cookies are made with an easy rolled sugar cookie dough and decorated with royal icing. Sugar Cookies with royal icing are simple to make and so great for every occasion.

I always love something homemade, because not many people make things from scratch. Most people buy Valentine’s Day trinkets to handout for school treats. But, I love something homemade and made with love. For more Valentine’s day DIY gift ideas try making Mixed Berry Jam, Raspberry Oatmeal Bars, Strawberry Rhubarb Pie, and Chewy Brownies.

The last few days I’ve been working on these Decorated Heart Shaped Sugar Cookies. I used Rolled Sugar Cookies and either double or triple the recipe. Of course, you can do that when you are blessed with commercial baking equipment and a 10-quart mixer. Yes, 10-quart! I would of bought the 20-quart mixer if I had a sink big enough to wash it! We’re planning on buying an older house and completely renovating it. Hopefully in the next year or two. So this farmgirl will be designing a big ole kitchen to work and play!

Heart sugar cookies with pale pink royal icing and sugar rosesThe first step is to make a basic rolled sugar cookie dough. Refrigerate it for a few hours or even overnight. For my schedule, making a batch of cookie dough at night and make the cookies the next day. By the time they are baked, I’m ready for an afternoon and evening of decorating. I used the Wilton Comfort Grip Heart Cutter. Roll out your dough to about 1/4-inch to 1/2-inch thick and cut your hearts out. Set them on a half sheet pan lined with parchment paper. (I love sheets of parchment paper, rather than a roll of parchment paper!) Bake at 400 degrees F for about 12 minutes or until lightly golden brown. Let cool completely before decorating with royal icing.

How to make Sugar Cookie Icing:

Step 1: To make royal icing: In a large mixing bowl of a stand mixer, beat all ingredients at medium speed until icing forms peaks and loses its sheen, 7-10 minutes.

Step 2: If peaks are not forming, increase the mixer speed and continue to beat. To prevent drying, cover the bowl with a damp cloth while working with icing.

How to Decorate Sugar Cookies with Royal Icing:

Step 1: Pipe outside edges with a thicker royal icing. Then go back and “flood” the entire cookie with thinner royal icing. Thin the icing out with a little bit of egg white. Stir together with a spoon and see how your consistency looks before placing the icing into a pastry bag. I use a wooden sandwich toothpick to help spread the icing to the edges. But, you can also buy a special tool to do this method. (My theory is to use what you have already!) On some of the cookies, while the flood icing was wet, I made white flood icing drops. Then pulled the toothpick to create hearts. On others, wait until the cookie is completely dry, then add the roses you made, after they dry thoroughly and add leaves with a leaf tip.

Or, you can use a 15 to 20 second royal icing and outline the cookie, then flood it.

handmade royal icing mini rosesWhile my cookie dough chills I make royal icing roses. You can find the royal icing recipe on the back of Wilton’s meringue powder. Make sure that your mixing bowl and all utensils are free of any grease. If you get any sort of grease on your mixing bowl, rubber spatula or work area, the icing won’t whip up and become stiff. So be sure and keep everything grease free!

You’ll need a few supplies from Wilton, including meringue powder, flower tip set, flower nail, couplers, and disposable pastry bags. (You can find Wilton Cake Decorating products in Walmart, Michael’s or on Amazon.) If you buy a small Wilton Cake decorating set, it will come with pretty much everything you need, plus a great little storage container.

How to make royal icing flowers:

Step 1: To make roses, you’ll use tip #104. Color the royal icing your desired color. I started with pale pink, and striped a small amount of pale yellow up the pastry bag before I filled it with pink. Then towards the end, just added white. This gave me a more natural looking rose and different variations.

Step 2: Cut parchment paper into strips, and then into little squares. Set aside a nice pile of parchment squares. Place a coupler inside a disposable pastry bag. Place your tip #104 on and then twist on the ring to hold the tip in place. Fill your pastry bag with some royal icing.

Step 3: Stick a little icing onto the flower nail, press that into a parchment square. Then, start by making a small mound of icing. Pipe the center of the rose, with the thin part of the tip up. Next, pipe petals. Start on one side, pipe a petal about half way around the center you just make. Go up and then back down and spin the flower nail as you work. Continue t o do this to build the entire rose. You want to overlap each petal a bit. Carefully slide the parchment square with rose onto a half sheet pan lined with parchment paper. Let dry completely, overnight, before removing from the squares of paper. Store in an airtight container in a cool place for extended time periods.

Pale pink royal icing roses on sheet panAfter the cookies are dry, I bag them up in a food safe plastic bag and close with a twist tie. You can add a brown Kraft tag and hand write details.

Ingredients

  • 1 1/2 cups butter softened

Instructions

Rolled sugar cookies

  • In a large mixing bowl, using a stand mixer, cream together the butter and sugar until smooth and fluffy.
  • Beat in the eggs, vanilla, and almond extract. Stir in the flour, baking powder, and salt. Mix until combined thoroughly. Scrape the sides and bottom of the bowl with a rubber spatula occasionally.
  • Place the cookie dough into a large Ziploc bag and chill in the refrigerator for 1 hour or overnight.
  • Preheat the oven to 400 degrees F. Roll out the dough on a lightly floured work surface to about 1/2-inch thick. Cut into shapes with cookie cutters. Place the cookies carefully onto parchment lined half sheet pans, leaving a little space for them to expand.
  • Bake for 8 minutes or until lightly golden brown. Cool completely before decorating.

Royal icing

  • In a large mixing bowl of a stand mixer, beat all ingredients at medium speed until icing forms peaks and loses its sheen, 7-10 minutes.
  • If peaks are not forming, increase the mixer speed and continue to beat. To prevent drying, cover the bowl with a damp cloth while working with icing.

Notes

TIP: For royal icing you need to make certain your mixing bowl and spatula are clean and free of any grease. If not, the icing will not set correctly. To thin out royal icing, beat egg whites with a few teaspoons of water. Gradually add to your individual bowls of icing to get different consistencies of icing. Be sure and cover icing bowls with damp cloths or it will harden!

You’re going to love this easy pork marinade for grilling. This delicious marinade for pork chops is easy and so flavorful with orange and garlic! I’ve created this easy pork marinade with Mazola® Corn Oil for these delicious Honey Orange Garlic Pork Chops.

I love grilling outside! Besides saving me from having to clean up the stove, grilling gives such wonderful flavors to food. Mazola has a smoke point higher than most cooking oils at 450°F and performs well in a variety of cooking applications. Many home cooks may not realize that all cooking oils have a smoke point that, once exceeded, not only negatively affect the food’s flavor and nutritional value. Be sure and try my Sweet Chili Chicken recipe with Mazola corn oil!

To lighten up my recipe, I used Mazola Corn Oil in place of olive oil and I’m grilling, rather than pan frying.

How to make Grilled Pork Chops:

Place all of the marinade ingredients into a large zip-style bag and push around the outside of the bag with your fingers. Place the pork chops into the marinade and seal the bag. Refrigerate for a minimum of 2 hours and up to 24 hours.

Grill pork chops on a preheated grill for about 3 to 4 minutes on each side. If you love your pork medium rare, you should cook it to an internal temperature of 145 degrees (followed by a three-minute rest) For safe cooking temperatures of pork, visit here.

Put the leftover marinade in a small saucepan, over medium heat with 1 heaping tablespoon of orange marmalade or apricot jam. Use a whisk to incorporate the marmalade or jam and bring to a boil to thicken. Spoon over the grilled pork chops. Enjoy immediately with seasonal vegetables or even over a green salad.

For this Taco Pizza recipe, I used homemade pizza dough drizzled with oil, minced garlic, baked in the oven to a golden brown. Then topped with sour cream, seasoned taco meat, tomatoes, shredded lettuce, and cheese. Add slices of avocado, sliced olives, and roasted red peppers if you like. Or any other taco topping you prefer. You’ll have homemade pizza in less than 30 minutes! And homemade pizza is so much better than any take out! What type of homemade pizza do you love?

Family pizza night is a breeze with 30-minute homemade pizza crust. It’s so easy to make with Fleischmann’s® RapidRise® Yeast. No fancy equipment needed for this pizza dough recipe! Simply mix in a bowl with a wooden spoon and knead by hand. Top your pizza dough with marinara sauce, shredded cheese, and any toppings you prefer.

Easy Pizza Dough Recipe:

Combine 1 cup flour, undissolved yeast, sugar and salt in a large bowl. Add very warm water and oil; mix until well blended, about 1 minute. Gradually add enough remaining flour to make a soft dough. Dough should form a ball and will be slightly sticky.

Knead** on a floured surface, adding additional flour if necessary, until smooth and elastic, about 4 minutes. (If using RapidRise Yeast, let dough rest at this point for 10 minutes.)

Pat dough with floured hands to fill greased pizza pan or baking sheet. OR roll dough on a floured counter to 12-inch circle; place in greased pizza pan or baking sheet. Form a rim by pinching the edge of the dough.

**To knead the dough, add just enough flour to the dough and your hands to keep the dough from sticking. Flatten dough and fold it toward you. Using the heels of your hands, push the dough away with a rolling motion. Rotate dough a quarter turn and repeat the “fold, push and turn” steps. Keep kneading dough until it is smooth and elastic. Use a little more flour if dough becomes too sticky, always working the flour into the ball of dough.

Ingredients

Pizza Dough

  • 1-3/4 to 2-1/4 cups all-purpose flour
  • 1 envelope Fleischmann's® Pizza Crust Yeast OR Fleischmann's® RapidRise Yeast
  • 1-1/2 teaspoons sugar
  • 3/4 teaspoon salt
  • 2/3 cup very warm water 120° to 130°F*
  • 3 tablespoons corn oil
  • 1/2 to 1 cup pizza sauce
  • Other toppings as desired
  • 1 to 2 cups  (4 to 8 ounces or 125 to 250g) shredded mozzarella cheese

Seasoned Taco Meat

  • 2 tablespoons corn oil
  • 1/2 large white onion, diced
  • 1 pound ground beef (80% lean)
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 tablespoon tomato paste
  • salt and black pepper to taste

Toppings for pizza

  • 2 tablespoons corn oil
  • 3 garlic cloves, peeled, minced
  • sour cream
  • shredded cheese
  • sliced cherry tomatoes
  • shredded Iceberg lettuce

Instructions

Seasoned Taco Meat

  • In a large cast iron skillet or pan over medium heat. Cook the onion in the corn oil until translucent.
  • Cook the ground beef over medium heat until browned. Stir occasionally with a wooden spoon.
  • Once the ground beef is browned, add the packet of taco seasoning, water, and tomato paste. Stir to combine. Cook over low to medium heat until combined.
  • Remove the seasoned taco meat from the heat and set aside.

Pizza Dough

  • Preheat oven to 425°F.
  • Combine 1 cup flour, undissolved yeast, sugar and salt in a large bowl. Add very warm water and oil; mix until well blended, about 1 minute. Gradually add enough remaining flour to make a soft dough. Dough should form a ball and will be slightly sticky. Knead** on a floured surface, adding additional flour if necessary, until smooth and elastic, about 4 minutes. (If using RapidRise Yeast, let dough rest at this point for 10 minutes.)
  • Pat dough with floured hands to fill greased pizza pan or baking sheet. OR roll dough on a floured counter to 12-inch circle; place in greased pizza pan or baking sheet. Form a rim by pinching the edge of the dough.
  • Use the back of a large spoon to spread the pizza dough with corn oil. Top with minced garlic and basil.
  • Bake on lowest oven rack for 12 to 15 minutes, or until crust is browned.
  • *If you don't have a thermometer, water should feel very warm to the touch.
  • **To knead the dough, add just enough flour to the dough and your hands to keep the dough from sticking. Flatten dough and fold it toward you. Using the heels of your hands, push the dough away with a rolling motion. Rotate dough a quarter turn and repeat the "fold, push and turn" steps. Keep kneading dough until it is smooth and elastic. Use a little more flour if dough becomes too sticky, always working the flour into the ball of dough.

Taco Pizza

  • Once the pizza is cooked, top with sour cream. Use the back of a large spoon to spread it over the pizza crust.
  • Top with seasoned taco meat, shredded lettuce, cheese, and tomatoes. Carefully slice the pizza and serve immediately. Refrigerate any leftovers.

Notes

Recipe Note: Use crust to make one thick crust 9-inch pizza. Increase baking time to 20 minutes.
