In my new cookbook, Fresh Made Simple, I partnered with illustrator Katie Eberts to put a visual spin on home cooking. I created 76 recipes using just a handful of fresh ingredients from leeks to mango, ginger to kale, eggs, cheese and nuts and then Katie illustrated each recipe, integrating the ingredients and instructions right into the full-motion drawings. The result is an illustrated collection of light meals, snacks, spreads and dressings for everyday eating. Eating – and cooking – doesn’t have to be complicated to be tasty and the recipes in the book are approachable for cooks of all skill levels – all you have to do is follow the illustration.
This Arugula, Pear & Fennel salad was inspired by the cool weather and fruits and vegetables in season during the winter months – particularly pear and fennel. It’s a great example of recipes in the book, but we created it just for Jessica and Carolina Farmhouse Kitchen.
I was lucky to find some late season corn a few weeks back at the farmer’s market, and cut it right off the cob raw for this salad. Thawing some frozen corn works too, or I like to freeze corn off the cob during the late summer so I can enjoy it year round. Sautéed red onions are so delicious, and add nice texture to salads, you’ll find them in Fresh Made Simple recipes, too!
The cookbook includes ideas for adding meat, if you like, to the recipes in the book which are all vegetarian and my website offers other tips for the recipes, suggestions for buying local ingredients, and a list of events where you can find me signing books and cooking samples!
